This little Welsh wonder is an artisan Red Leicester laced with chilli and crushed pepper and sealed in red wax. It's a wonderful mouthful of moist tangy cheesiness with a bite of heat; but the chilli doesn't overwhelm the cheese or outstay its welcome. So you can happily eat slice after slice as many people do.
Red Devil is one of a range of wonderfully named and flavoured cheeses from the Snowdonia Cheese Company. You might also want to try Pickle Power, Green Thunder and Black Bomber, the cheddar with attitude.
What with? Red Devil melted on toast will warm the cockles of your heart on a cold winter's evening. A glass of beer or a Rioja like Beronia Gran Reserva cuts through the spice nicely.

The roots of the Snowdonia Cheese Company evolved from the change in food and farming in the latter part of the last century. The globalised food production model was emerging, and consumers wanted to return to localised foods as an important part of their diet. Snowdonia set out with a 21 year business plan to define itself as a regional champion of food, and to build its market in the UK and in export over the longer term.
One third of the way through that plan, Snowdonia has brought a range of contemporary cheeses into the market, and is now working in additional food categories such as pickles and preserves.
